Just thought I'd use this picture as food for thought not to overstock one thing (although IMO I can never have too much coffee:biggrin:) and fail to stock other things that we might want down the road.
What kind of things are the rest of you overstocking or understocking?
What's the problem with this photo? I forgot to buy coffee filters!:p

most of my cached food is canned tuna and oatmeal packets, with the occasional luxury item thrown in
in my last few caches, i've been overstocking on spices

Cowboy coffee tastes the same, no filter. yeehaw!
For cost of calories and shelf life considered. I have overstocked protein and carbs. Fruit and Vegetables will be the last to be shelved due to shortest shelf life, freeze dried already there for long term.
Being addicted to freshly harvested fruits and vegetables makes storing of difficult. Canned, self and purchased, is not even close in texture or flavor. Did just find pear halves and peach slices with NO SUGAR added @ Hannaford's -New England. Concentrated pear juice for sweetener. 7 on texture, 8 on flavor, $1.76 for 28 oz. Pears mid '11 expiration. Peaches mid '13. Hope new pear batch arrives soon. Prices are climbing everywhere. Overstocked on canned butter too..... yeah right! Not possible.

I try to stay balanced. Coffee is bad for you. No need to screw oneself over in a SHTF world. Take care of your health!

Depends upon usage of and blood type. "Right 4 Your Type" D'Adamo. Coffee is bad for my blood type, so I moderately abuse my stomach lining. lol

Canned tuna carries the risk of mercury. Canned salmon or mackerel are a lot safer.
You'd be much better off buying the bulk-size containers of oats instead of instant packets--if those are what you're referring to--and sealing them up in airtight packaging such as mylar bags. The paper packets that instant oatmeal comes in absorb moisture. I buy the 42-oz. containers of generic brand oats at Walmart and seal them up in mylar for about 9 cents per ounce. You're paying a heck of a lot more than that for instant oats, and not getting nearly the shelf life you need if you aren't sealing it up in airtight containers.
As for spices, again, you need airtight and moisture-proof containers--which store packaging isn't. Why not buy bulk sizes of spices and store them in mason jars? The photos below are quart-size jars. It's much better to have "too much" spices (not possible, IMO) than to have too little and to end up suffering from food fatigue:
